My one "issue" with wellingtons is that sometimes the puff pastry gets a lil too soggy when it's baking because of all the juices. If that was an issue for the salmon too, you can try and make or buy premade crepes to be a buffer between the pastry and the meat. Really helps give a nice all around crunch

Salmon wellington is also great with fresh spinach, dill, cream and a splash of lemon juice, instead of the dip. And mustard on the salmon.
