Thank you, Adrian. Jerk at home began with pork. It was only later in the mid-1950s that we started jerking chicken. Now, it is very difficult to get it in Jamaican food shops in Canada. They are busy jerking everything else but pork. Here in Mississauga, I can think of only one takeout restaurant that boldly and unapologetically offers it for sale. I refuse to patronize any Jamaican restaurant, food truck or food counter here in Canada that does not carry it on their menu.

Not eating pork anymore but hey.. A lot of people don't know they can do it in the oven. You don't get that smoky jerk taste but it still tastes good
