Around the farm I have blackberries, muscadines and a row of elderberries. I've made jelly from all three but the elderberry is my favorite. To me it tastes like raspberries. I take my berries off the stems using a serving fork. The tines are a bit wider apart so you don't get so many berries stuck in the tines like you do with a regular dinner fork. Then I freeze the berries until I harvest enough for two batches of jelly. I tend to make enough syrup for two batches at one time and then I can make a batch or two with it and save the time of cooking down the berries twice. You can even can the juice if you need too to save it until you're ready to make jelly. I was watching your video while my berries are simmering down into juice this morning. One nice thing about elderberry jelly, most people have never had any so I always try to make a few extra jars to give away to family and friends at christmas.
I have made syrup with wild elderberries for years. Don't know why I haven't done jelly. I also don't use pectin because I mix either crabapple juice, gooseberry juice with them. I also do half of both elderberry and wild chokecherry. Wonderful syrup for pancakes and waffles. Now off to make jelly. Num num.
You can mix your pectin in a 1/2 cup of sugar put in with your juice it makes it easier to dissolve then add the rest of your sugar at full rolling boil. Great job I need to have my husband watch you so he can help me lol .

Ingredients 6 quarts elderberries (about 3 pounds) to make 3 cups of juice 3 cups juice 1/4 cup lemon juice 4-1/2 cups sugar 1 box powdered pectin 1/2 teaspoon butter, optional Directions For Juice: Discard stems and crush berries. Place in saucepan. Slowly bring to boil until juice starts to flow. Reduce heat; cover and simmer for 15 minutes, stirring occasionally. Place jelly bag or 3 layers damp cheesecloth in large bowl. Pour in fruit. Hang bag and let drain until dripping stops. Press gently to get all the juice squeezed out. Measure exact amount of juice into 6- or 8-quart saucepan. (You can add up to 1/2 cup water to get exact amount of juice needed if berries don’t make enough juice.) Stir in lemon juice. In separate bowl, measure sugar. Stir pectin into juice in saucepan. Add butter to reduce foaming, if desired. Bring mixture to full rolling boil over high heat, stirring constantly. Stir in sugar quickly. Return to full rolling boil and boil for exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle hot mixture quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cap and process for 5 minutes in boiling-water bath.

I bought a lot of the European dried Elderberries (7 lbs) & I can make quite a bit of juice, syrup, gummies & I'll be making hard candy too. Hubby loved hard candy 🍬. Maybe one day, Father willing. I bet it tastes amazing❣🙆♀️
You likely know more than I do, but I have always been told to use bottled lemon when canning because the bottled lemon juice has a set acidity while actual lemons can vary in acidity, which can effect preserving.
very VERY nice. LOVE the CRAFTY SKILLFUL OL SKOOL ways. Doesnt matter how digital or technological the world gets, can not replace crafty skills. Big fan of crafty stuff, esp old school country style, we dont get to experience much in modern day esp in big fast paced high volume metropolitan cities. So 6 yrs later Im watching this, how long did the batch last you? Did u store them in dry storage or freezer? and the mason jars, are they still in tact for canning today 6 yrs later? How are the elderberry bushes doing? Im so jealous ahah, I want to live this type of lifestyle in the future too! Great work!!
Elderberry jelly will last up uo 10 years we find if kept in our cool dark root cellar and water bath processed. We always use it before that though. I planted new Elderberry plants 2 years ago and they are doing amazing. There's a video about them. They are a flavor that people either love or hate and luckily we both love it. Never give up pursuing your dreams. Thanks for watching.
kia ora from new zealand tyvm for the video. Lemons get more juice if you soak in hot water or microwave to warm up. That allows the juice to slide out more.
I cut the top and bottom off of the lemons, limes,, and oranges then cut the fruit in half. Then I put half of the fruit in the squeezer right side up and squeeze the juice out. I get more juice from the fruit that way.
My tip for stained fingers/ hands/skin - a bit of bleach on cloth/ paper towel/ dish sponge and rub directly onto skin , rinse well - stains instantly removed . Another tip for preserving - fill your jars to under 1/4 th with water and place in microwave for about 5 minutes or as long as water is boiling vigorously - boil caps/lids separately for few minutes ( not in microwave )
I have made elderberry jam with only elderberries and sugar -nothing else. It was OK, but I ate it all myself as there was too much roughage in it to give to visitors. Hence elderberry jelly I suppose. What is good is stewed elderberries hot with custard. I would imagine you could freeze raw elderberries in packets and stew them through the winter, but I haven’t tried it yet.
Our Elderberries did well this year, but the bugs and birds were eating them as fast as they would ripen. I have heard you should avoid unripened fruit as it is poisonous. Not sure if it is the light red or just the green ones. I added them to an apple pie last year and it was pretty good.
I am lucky the birds prefer the high bush cranberries from the hedge I planted on the other side of my yard. I always try and only pick the ripe fruit and discard any green ones . Thanks for watching.
I'm not sure about the 'unripened fruit', but I've heard that the uncooked fruit will give you a bad tummy ache or the runs and that the stems and leaves contain a fair amount of cyanide. So, those are best avoided.
Would you explain to me what fresh elderberries taste like? Are they sweet, sour, or tangy? I want to know because I saw a bunch of berries close to my home that look just like the berries on your video, but I'm not 100% sure. Also, what do you use the elderberry jelly with? Ice cream? Peanut butter and jelly sandwiches? Mix with iced tea? Thanks for this excellent post, btw! You did a fantastic job of showing us and explaining to us how you make your elderberry jelly!
They have a unique bitter flavor that most either love or hate. The jelly is great on pancakes, with peanut butter and cream cheese on sandwiches. Some also make a syrup from them. They grow wild in many places. Be careful with roadside berries because many areas use chemicals to control roadside weeds. Thanks for watching.
@@unemployedredneckhillbilly2023 Thank you sir for taking the time to explain in good details about what elderberries taste like and what they are used for! I appreciate it! But just to make sure before I try them next summer --- they are a little sweet as well as bitter, right?

Elderberries leave a yellowish coating that is almost impossible to remove so most of the time we just toss them. Lemon juice will remove some berry stains. Thanks for watching.

I have to add water to mine and I cannot get that much juice out of mine. Also, the birds, the birds, they eat them so I have to race the birds. When I pick them, I hear them squacking at me!
Your wife is correct about getting more juice out of the lemons. I just found out recently about how to use the juicer correctly thanks to another You Tuber LOL! This jelly looks great. Do you think the wild elderberries work out the same??
They are just called american elderberry. I bought the bare root plants a couple years ago at a local soil and water conservation district plant sale. Luckily the birds like the high bush cranberries I planted on the other side of my yard better and leave the elderberries alone. I started looking into a patreon account, but have to do some more research on the TH-cam policies. Thanks for watching.
I don't have a problem with birds eating them. I have a high bush cranberry hedge on the other side of my yard and the birds prefer them. There are also sunflower seeds falling on the ground that they really go after. Thanks for watching.
I have made some excellent wine from them. Last year they died during the drought and I am so glad they recovered. I do not cut them back, I just planted them a couple years ago.

Ingredients
6 quarts elderberries (about 3 pounds) to make 3 cups of juice
3 cups juice
1/4 cup lemon juice
4-1/2 cups sugar
1 box powdered pectin
1/2 teaspoon butter, optional
Directions
For Juice: Discard stems and crush berries.
Be sure to use the recipe on the pectin you buy for best results. Thanks for watching.

I wish I could find wild American Elderberries, I'd love to try the homemade jelly.
Yes they can. For the jelly we always use fresh. For other items we use citric acid to be safe. Thanks for watching
They make awesome wine and jelly.
Your jelly looks delicious. I am going now to have somehomemade (by someone else) elderberry jelly with toast.
It is my favorite jelly. Hope that is on homemade bread. Thanks for watching.
Lol!
for pectin go forging for amber jelly roll, dehydrate, use as natural pectin.
I will have to research that, never heard of it. Thanks for watching.
My first elderberry jelly. It came out good. Your video is great. Thank you.
My elderberries are still weeks away from ripening. Can't wait to make another batch. Glad yours came out good. Thanks for watching.
very VERY nice.
Thanks for the tip. Thanks for watching.
I cut the top and bottom off of the lemons, limes,, and oranges then cut the fruit in half. Then
I put half of the fruit in the squeezer right side up and squeeze the juice out. I get more juice from the fruit that way.
I will have to try that. Thanks for watching.
😁😁😁😁 Me too ! I use that lemon juicer every day .
It works great once you figure out how to use it. Thanks for watching.
I always use a fourth a cup of the sugar to the pectin whip it with a whisk so you won't have any problems with it clotting in the hot juice.
Thanks for watching.
thanks..i've only used them for tincture in the past.... gonna give this a try when they ripen
The flavor and aroma of this jelly is just amazing. They also make great wine. Thanks for watching.
Stick the lemons in the microwave for 20-30 seconds. Works better than rolling.
First time I have heard that. Will try it. Thanks for watching.
This is by far my favorite jelly to!!!
It has an flavor unlike anything else. Thanks for watching.
Chlorine is not good for your skin and can react. The new lids no longer get boiled, just washed with hot water. Thanks for watching.
You can also use baby oil and it’s not as harsh on the skin. I use baby oil to get dried paint off too.
Your jelly looks amazing! I keep hearing about Elderberry jelly and syrup but haven't tried either.
Give it a try. The flavor and aroma is amazing. Thanks for watching.
Thank you for sharing all your videos!! Very helpful
Glad you like them. Thanks for watching.
Great job. Can we see your canning room. How many jars do you have
Do a search on my channel for root cellar and there are a couple videos. We used to do about 600 a year but are cutting back now. Thanks for watching.
The pectin really just stiffens it up. I also have made awesome wine with elderberries. Thanks for watching.
Yes-found a recipe with honey-will try
I have heard mixed results when using honey and pectin. Let me know how it turns out.
That Elderberry syrup is very yummy to
Someday I have to make some. Thanks for watching.
Thank you for sharing now I can make my own. I know there was a missing ingredient my Aunt would make her own jellies couldn't get it right.
Take your time and there are many great jelly recipes available. Thanks for watching.
@@grandwonder5858 They are not sweet at all by themselves. A very strong bitter flavor that really needs some kind of sweetener to enjoy.
@@unemployedredneckhillbilly2023 Okay, thanks for the explanation!
Did you say “beer fridge”? Love it
Well it's really for beer, wine, and hard cider I make 🍺. Thanks for watching.
What kind of elderberries and where can you locate plants. Thanks
I got the seedlings from my local soil and water district spring plant sale. Don't know the exact variety. Thanks for watching.
2020 Covid Canning...I got plenty of time now Thank You..
You and millions more. Get your supplies early before everything is sold out . Thanks for watching.
Yep me as well -- 2020 Covid Canning -- it's a thing!! Thank you so much for your videos ... enjoying them.
Love your videos, had a good laugh about the lemon press
I tried following her instructions but it just didn't work right. She said she saw it used that way on a cooking show, so don't believe everything you see on TV. Thanks for watching.
Do u have to do bath after jelly is canned. I do that for my salsa but not my jelly normally
We go by what the recipes call for to be safe. Thanks for watching.
In Romania we pick the flowers and use them for summer fizzy delicious drink. "Suc de soc "!
I never knew that they have berries.
I'm curious if it's as beautiful perfumes as the flowers 💛
The berries have a very unique flavor but have no aroma until crushed. I have also made some awesome wine from the berries. TH-cam makes the world seem small. Thanks for watching.
nice video-could you use honey instead of sugar?
I have no idea. Thanks for watching.
can you tell mehow younall clean your cheesecloth or muslin clothsafter straining berries through tia
Elderberries leave a yellowish coating that is almost impossible to remove so most of the time we just toss them. Lemon juice will remove some berry stains. Thanks for watching.
Great video 💯
Glad you enjoyed it. Elderberries make awesome jelly. Thanks for watching.
@@unemployedredneckhillbilly2023 first year foraging them myself. We have an absolute abundance in the UK they grow wild everywhere.
Have you made a video of making elderberry wine?
A long time ago. Search my videos for elderberry. Thanks for watching.
Way does Ball want to go mess up a tried-and-true method ? When I first used the new lids , I did not know you were not supposed to heat them up. They worked just fine after heating. All jars sealed.
I don't know. I never had a problem with the old style lids, but last year lost a bunch of seals using the new BPA free lids. I am looking for another source. Thanks for watching.
Awesome man, do you have any videos on how you make your wine with it?
There are a couple basic ones if you search my channel for elderberry. It takes several years of aging for it to be any good though. Thanks for watching.
I've never had elderberries. Also what do you do with your hops? Thank you
Elderberries have a very unique flavor. I haven't saved any good hops yet. The winds here usually dry them out too quickly. Thanks for watching.
Those are incredibly productive bushes and huge berries. What the heck are you feeding them?
Nothing. We had a drought a couple years ago and lost those bushes. Planted some new ones and get several hundred pounds now. Here's a video of the new bushes at a year old th-cam.com/video/9HhLgldqPoY/w-d-xo.html
Thanks for watching.
I have to add water to mine and I cannot get that much juice out of mine. Also, the birds, the birds, they eat them so I have to race the birds. When I pick them, I hear them squacking at me!
Birds love them. Other fruit juice would also work. Thanks for watching.
Your wife is correct about getting more juice out of the lemons. I just found out recently about how to use the juicer correctly thanks to another You Tuber LOL! This jelly looks great. Do you think the wild elderberries work out the same??
Wild elderberries should work fine. They may even have more flavor. Thanks for watching.
And a second thought is to take all that waste and put it in some vodka to make a elderberry tincture
I just compost it, but that would work if you like vodka. Thanks for watching.
What is the tincture used for?
@Janette Lavender the tincture is used for colds and flu and coughs it works there lot of videos on the elderberry tincture hope this helps
@@bobinmissouri I thought that the stems and leaves are a bit toxic?
@@kristinaginorio1344 I don't use anything but the berries when there ripe and yes the leaves and stems are toxic
Thank You :)
You're welcome! Thanks for watching.
Very good video, thanks. cheers !
Thanks for watching.
Hello! can i make syrup this way
No, you need to tap maple trees.I have videos about making it if you search my channel. Thanks for watching.
Great video. What climate zone are you in, and what variety of elderberries do you have?
Thanks. 6b and just elderberry plants with no name we got from the local soil and water extension annual bare root plant sale. Thanks for watching.
A great way to remove elderberries from the stems is to freeze them and then they pop off really easily.
If you have extra room in the freezer. I freeze them before using them to make wine because they break down better. Thanks for watching.
How much do you need to make wine with?
I have a video about that. About a 5 gallon bucket full works good for a 6 gallon carboy. Thanks for watching
@@unemployedredneckhillbilly2023 thanks for the response, love the videos bubba 👊
What variety of elderberry plant do you have and have you set up a patreon account yet? Love your show and very informative.
Could you use honey instead of sugar? Thank you
I don't think it would set with honey but I really don't know. Thanks for watching.
hi is there any recipe for your sauses please. xx
We don't make sauces. We use the jelly recipe in the pectin package. Thanks for watching.
Is it ok to use blk and red berries together?
The red ones are not ripe yet. Try to only use ripe berries for the best jelly. Thanks for watching.
Great Video Thanks!
Thanks for watching.
Do you have a wine recipe
I have videos about making it. Just elderberries, sugar, and yeast. Takes 4 years till it's good to drink. Thanks for watching.
@@unemployedredneckhillbilly2023 I was wanting to make Elderberry Mead how come it takes 4 years
It tasted like rocket fuel the first 3 then mellows out.
I don't know that you mentioned measurements.
Because you use the measurements supplied with the pectin you choose. Thanks for watching.
Can I make this recipe with dried berries??
They should work if rehydrated but I have never tried it. Thanks for watching.
Nice video, but was wondering how you keep the birds from eating your entire elderberry crop?
I don't have a problem with birds eating them. I have a high bush cranberry hedge on the other side of my yard and the birds prefer them. There are also sunflower seeds falling on the ground that they really go after. Thanks for watching.
I have made some excellent wine from them. Last year they died during the drought and I am so glad they recovered. I do not cut them back, I just planted them a couple years ago.
Where is the recipient? Please
Use the one that's in the pectin box. Each pectin comes with a recipe sheet. Thanks for watching.
i love this video, thank you but the problem is sugar, too much sugar, is there any way to do it without sugar ?
I don't think it would be anu good without sugar. You may be able to make a syrup without sugar. Thanks for watching.
Yum!
Thanks for watching.

You sound like Woody Harrelson! We have a ton of wild thimble berries, I think I'm going to make some jelly!
Are thimble berries the same as elderberries? Thanks for watching.
Unemployed Redneck Hillbilly Creations Thimble berries are not the same. My favorite berry. Its very delicate and when ripe almost falls apart as you pick it. A great flavor of its own and the seeds are so tiny that the texture is very different too. Yum. Props to anyone who takes enough time to process thimble-berries.
