When I buy tomato paste it’s usually a large jar. So what I do stop it from going bad is I place it an ice cube tray and freeze it. Once it is frozen, I pop it out of the ice tray and store it in a Ziploc bag and keep it in my freezer for when I’m ready to use it. It’s great because I’m not wasting tomato paste by having it go moldy.
This is exactly what I do when the tomatoes are many and start going bad. I puree them, cook the puree untill it becomes slighter thicker and then cube the cooked puree once it cools down, in the freezer. I store these cubes the same way as you mentioned and use as needed.
I love all your videos, but your most recent series on how-tos are AMAZING. I am 63 years old, and have been involved in food preparation and preservation my entire life, and I still learn so much from you! SO grateful for you and your team. Be blessed!
Wow! I never knew about that egg trick and have always put the narrow side up. Not anymore. Thanks for the tip. I definitely want to see that cheese episode.
Wonderful video as always! I’ve been watching someone in America called The cross Legacy and she does this vinegar solution wash for two minutes with certain produce to keep them fresher longer and IT WORKS!!! And now you have educated us on scientific stuff. Thank you 😊
My grandmother used to line the crisper (bottom drawer for vegetables) with folded paper bags then lay her vegetables on top in her fridge. The paper would absorb the moist air circulating around the vegetation. Also she would wrap the cilantro in paper towels & store in a container & mushrooms would be stored in a paper bag.
Happy New Year Refika and crew! If anyone is considering a vacuum sealer for their kitchen, I highly recommended it. Some models even have a tube attatchment that you can use with vacuum containers.
thank you refika. I stopped the video and immediately went to the kitchen and did the avocado suggestion. i needed that . I bought a lot of avocados on sale yesterday. I worried if could eat them in time. news I could use in real time. YAY!
I never thought of the cord in the eggs! I store them big side up because they're easier to pick up out of the carton, especially if they're a little slippery from condensation. So now I have two reasons to do that! 🤗
I also learned that when you mush avocados with a little lemon juice, you can just freeze that and use it whenever you want. I do this every year because I have avocado trees and I just can't eat them fast enough!
Hi Refika, I’m a big fan and have been for many years. I cook Turkish and Lebanese food. So your recipes are amazingly helpful. Thank you for all the recipes, hacks and lessons on Turkish culture. We love Turkey especially Istanbul. Need some help with PURE vegetarian dishes ( without meat broth) that are available in Istanbul. Any recommendations would be helpful. Thank you in Advance
Thank you, Refika! This was a very helpful to know. Maybe for the future, this information could be 2 in separate videos that are shorter. There was a lot to learn in one video!
Funny, I was just looking at the correct storage of food just a few hours ago. Perfect timing! I've gone vegan again, new years resolution! So is it the same with vegan butters, cheeses and milks? Thanks
Very comprehensive and loaded with useful tips about a topic that we don't give much thought to. As always, much love to you and your most talent team!!
I gratefully thank you for this timely wealth of information, I will be using it. In all of your videos you teach us not only how to do techniques, but also why.💙
Hello Refika! Thank you for your wonderful videos and good energy! I know it can be a decision to be upbeat and positive! Sending love and good energy back to you! 💚
Thank you soo much! This was the video I was waiting for the most in this series! I see where I made mistakes in storage of my groceries! I hope this tipps will help me to preserve especially my greens longer.
Thanks a lot, Refika and the team, for transferring us this valuable information. They are highly helpful. I need to rewind the video to memorise it better. Buona domenica ❤
This food storage is 100% reliant on electricity. I’m from Canada and I do a lot of canning. It helps a great deal. I don’t know if this is done in Turkey but I would like to know.
Thank you so much for all this information I always learn much from you..the eggs, cheese, and meats were good information for me and the mushrooms.. you are very knowledgeable and always help people to understand..be safe and many blessings to you and you crew..🦬🐞🦅🥰
Alhamdulillah Refika such great advise! Thanks Refika and Team, looking forward to the next Barakat videos and the have a wonderful flavorful and productive 2025~🎉🎉🎉
Oh gosh, that's exciting to know your book is ready - do hope we can get it in Australia! This was very helpful - some of it I did know - thank goodness, but didn't really know about the difference between frost-free fridges & the old fashioned type... I suspect we need to be more Plastic-Aware when it comes to storage - it has been so convenient these past years - but perhaps like a lot of things, when it gets toooo easy, maybe there is a hidden downside. Looking forward to some info on when NOT to eat - mushrooms, I'm always a little weary of, and as you say cheese like Stilton - especially the kinds of soft cheeses you buy which are cut from a larger cheese - I'd like X-ray specs to see the bacteria - is it good or bad?! Have a Happy New Year, Rafika and friends... Congratulations on your book.
Thank you for such useful information. I’ve been washing my eggs as I buy them from the market and they are dirty. Should I just wipe them or maybe wash as I am about to use them Refika?
Thank you for the tips. I have a question, is it possible to defreeze and freeze again the fish? You say that you can do it with the meat but I don't know if it also works with fish
In the US our regulations require eggs to be washed before they can be sold, which of course removes the protective coating, so they don't usually store as long as in Europe. However, if you get eggs fresh from a small farm, they're not required to be washed. I try to get those whenever I can.
Excellent tips! A couple I already knew about but great to add more to the knowledge arsenal. I have one, please ask your editor(s) to calm down with the mid-sentence jump cuts. It's awful viewing. It must've saved less than 30secs of video. Like watching reruns of Max Headroom.
Wish there was actual visuals to go with the hints. I heard it but some of it but I am feeling shakey about it because i could take some of the instructions several ways. I am afraid I would take it the wrong way and then ruin good food. Do know that some of your food tips work!
Freezing meat: When freezing and thawing meat, you have to pay attention to a few things. 1. Vacuum seal 2. It is an advantage if it freezes quickly. Spread the meat/minced meat flat in the plastic bag and do not stack it in the freezer until it is frozen. 3. Slowly thaw in the fridge for 24 hours. In this way, you can, for example, freeze a steak twice (for whatever reason) and not notice any difference in the consistency or taste. The advantage of flattened minced meat is that you can put it straight into the pan like a burger patty without defrosting it. With chicken breast, you don't need to defrost the meat either, you can fry it straight away.

We really needed this!!! My daughter, a certified chef, throws away so much food...I will ask her to sit down and watch this. Thank you Refika Canim.

I worked for the poultry department of a retailer. Yes she is correct. Placing eggs blunt side up helps to stabilize the yolk.
Wonderful video as always!

You can put hard avocados in the fridge and take them out as you need them a couple of days ahead they keep a couple of weeks
Yep. I do that.

You are doing the best kind of preservation... as no electricity is required...
They make yogurt and surely ferment vegetables as well.
Look into it instead of canning. Healthier and no cooking.

You lose a lot more nutrients with canning. It's a big tradeoff.
It is done in Turkey especially when some fruits/vegetales are in season to preserve them for winter.
We actually do canning almost any summer produce
Thx for some good tips! I just found your channel and have subscribed. Your videos are nicely done and informative!
Excellent video. I look forward to the next ones on food safety, storage, etc.
