Where do you get your scallops and know if they are wet or dry? Not as in dried Chinese style scallops, but not the wet ones chemically processed with STTP to hold extra water?

Actually to cut the asparagus more safely, can hold them with your flattened left hand, thumb tucked in, then cut at a 45 degree away from your left hand. Cut the length of the asparagus gradually from right to left. The left hand acts as a pulling force is actually easier than what Grandpa Lau showed us. Of course, work with a sharp knife and exercise caution at all times.

Super good dish! If you have access to good scallops, you can skip the boiling water and wine part since it'll ruin texture and make it really hard to get them dry enough for a nice browning. Only frozen scallops have that nasty smell usually
No, Mr.Lau is confident with his cooking skills. A skilled Chinese chef can do it without a drip of water out of the pot.😊 please consider again when cooking, 50 years in kitchen he is.
When buying scallops, ask if they are wet or dry scallops? Dry scallops fry up better, wet scallops will have additives added. Dry scallops usually are more fresh. Many times the person behind the counter won’t know the difference.

I personally have always preferred this dish with snow peas. The sweetness pairs great with the natural sweetness of the scallops.

Awesome video. For pan frying scallops, especially for frozen scallops, they tend to become very watery and will not brown. How to avoid this?
