I think when they drank his blood to gain his spider like demon abilities and you see him rip her face, it was like when the father malted and shed his skin right to become a strong version of himself, so she became spider like and Rui shed her weaker form
The lower rank demons are nowhere close to a hashira level, that's why it was so easy for Tomioka to slay Rui. when it comes to a hashira vs an upper demon it depends, you will see fights vs upper demons later in the series if you haven't watch it already. Also the way the demons are made it based on Muzan's blood, some of the 12 Kizuki have the permission to share blood then Muzan decides whether he accepts them or not, also he knows where every demon is and what are they doing, with some exception.

The anime didn’t include it, but Giyu created the 11th form which is why Tanjiro had never heard of it. Love how it fits Giyu’s personality. Lol.
maybe every hashira can make their own move because they are so skilled. Like Rengoku had a Rengoku form
