ERMINE FROSTING tasted like Whipped Cream Frosting

  • ERMINE FROSTING/ROUX FROSTING/ BOILED MILK FROSTING/ FLOUR BUTTERCREAM
    Total Preparation: 20 minutes + Flour milk mixture cooling time 1hr or more
    Type: Frosting
    Storage: Can be stored in the refrigerator for a week in air tight container
    Having tried this Flour or Boiled milk frosting, immediately fell in love with its lovely texture which was light & fluffy. The taste was amazing, less sweet as compared to American buttercream and more or less like the whipped cream. For many of them, this cream tasted exactly like the Swiss Meringue or Italian Meringue Buttercream. Seemed easy to work with, so, will definitely try decorating cakes using this Ermine buttercream.
    Ingredients used:
    68g Maida/ All Purpose Flour
    300g Sugar granulated
    Salt a pinch to balance the sweetness
    360ml Milk Full Fat
    340g Butter unsalted
    1tsp Vanilla essence

    I love ermine icing. I use it to make a red velvet cake. This recipe came from the 1800's

    We have a similar frosting in Germany where we cook the pudding with starch (=a sachet for cooking vanilla pudding)

    Thank you so very much for sharing, my children prefer a less sweet icing as it hurts their throat when the icing is too sweet. I appreciate you posting an alternative icing that is not too sweet.

    Can I add the cooked flour to whipping cream for even more fluffiness?

      I haven't tried mixing this cooked flour & whipping cream together. Am not sure if it works, might deflate the airy whipped cream. Thank you for the query.

      Color I added as in any other regular buttercream icing. Semi liquid gel food color. Thank you.

      Yes, it does work with stability in hot climates. Still, if not used immediately, must be kept inside the refrigerator. And once out please do beat again until fluffy , coz, I found that once it's chilled or cold, this buttercream does seem curdled slightly. Beating will regain its smooth texture.
