Whein I try to do this 10:00 part, it just makes the whole thing one plane. It doesn't leave the inside roof open. IT just closes it. What do I do?

I've watched in 2x speed and I was still able to learn some new tricks
you can play the video at a slower speed, but it's not really for beginners
