I have 2 old forklifts older than that, one all worn sloppy, the other kind of rotted from sitting for years, did not regret buying either one of them. When you have 2 you can use one for muscle when the other needs repair and also helpful for tandem lifting large and heavy items.
You need whole new cab supports. You can probably make them yourself to save money. If there is any damage to any part of the cab structure, that whole entire part needs to be replaced. For safety. The left pedal is your inching pedal. For efficient operation use the inching pedal as your brake pedal and the brake pedal on emergencies.

I personally wouldn’t buy a used electric fort lift as the batteries are always on the way out and once they no longer function enough it is cheaper to buy another fork truck. Gas ones are worth fixing to me. You do need a 6 or 8 lug tandem axle trailer eventually also.
Thinking about the colour scheme. You should keep the top a light colour such as orange, cream or white. By all means paint the safety cage black, but keep the rest light as it helps keep it visible to others when in use. As you are working on it, there looks like plenty of space on the dash to add switches for both front a rear working lights. Also, if you don't like the strange diagonal operation of the mast controls, there is nothing stopping you from swapping a couple of lines around on the actuator block.
The pedals are as it should, the right is gas, left is clutch and brake in one....don't need the middle one. I learned (the hard way) ALWAYS use the handbrake when you get off, even for a second. There will be a moment it runs off on you if you don't make it a habit. It it a cute little forker, but it still is a steel brick.
Your right. Our society has kind of made it seem ok to just throw stuff out and buy new. People back in the day all knew how to troubleshoot and repair their own stuff. That is not the case anymore.
My adcice is: Look after the roof, so if you dropp something, that you wont get it over you! Then you can change hoses etc. Happy for you! Then you can paint it in your colors! Change the oil etc on it!

Looking at that weight plate, you can lift a standard pallet with 2490Lbs (1200Kg). The most important figure is the middle one as it indicates the load centred on the middle of the forks.
I just watched another channel , where the guy bought a non working propane Clark lift for $2500. Fixed it. Now he's going to sell it. But he bought a small working electric lift, for his shop. Looks like just what you need. Sounds a little like the exhaust needs addressing.
The one thing about the roll over protection cage is that Oshawa does not like you cutting or welding on it unless after the work has been done that it is reinspected

hoses filters look for leaks leave chains alone very expensive and it is already stretched don't disassemble mast looking for trouble there too if cylinder is not leaking go with it but buy a kit for it clean flush tank inspect inside and out replace all filters fluids leave wheels be a thousand for the wheels if they are not chipped or cracked. hey other than that grrrreat you will know what you are going to do with it after your first lesson in expenses and how many bolts are corrosion welded. paint is your cheapest do it list. congrat's
Im a forklift mecanic and i think you should only repair the saefty stuff and that one hose. Dont over do anything that you dont need to. For exampel the chains you can measure if they need replaceing. If the chains is 3% worn out you must replace them. I recommend lupe upp the forklift and use it. 😎

Possible name could be "Mini-Me" from the name of that little midget character from the Austin Powers films. The Dumpster Lid for the top is hilarious but it works.
That pallet jack probably just needs to be bleed. Hold the handle like you are lowering it and pump the handle about 10-15 times. Make sure it has hydralic fluid in it first. Hope this helps.
