Diced potatoes are good but traditionally masala dosa is filled with mashed potatoes (mashed by hand is best as the wife/cook's loving energy goes into the filling). You also need to incorporate a lot of air into the dosa dough by mixing it, picking it up in a ladle and dropping it in the same dough. That will make it fluffy.
For masala dosha we don’t turn it around. It’s always one side baked and the masal is put in the middle and wrap it. Add some chopped carrots and boiled green peas and some tomatoes to the masala also. Then it’s fun. Tastes better with sambar. Anyways great job without all those stuff.

Everybody flips the dosa at home. Yet see someone who doesn’t flip it. Home gas ranges don’t go over 15,000 BTUs, meaning they don’t get hot enough to cook it from one side.
I’m talking about Masala dosa, masala dosas are never flipped. Watch any TH-cam channel making masala dosa and see if they flip it. Anyways we South Indians don’t, may be you guys do.

Soak the chana dal for 30-45 mins before sautéing it. It will cook more easily and will be soft crunchy as opposed to hard crunchy , need an appointment with the dentist crunchy. Also, fry in low heat so the chana dal can cook all the way through
If you leave the batter out at room temp for say an hour or so the batter rises due to fermentation then use it to make dosa, a restaurant owner told me about this. You may want to experiment with just enough to make one dosa and see if you like. This brand also makes uttapam batter, its the same batter I think, except it is thick. Restaurants have very thick griddle pans, that also makes a difference. You did very well.

If you want to make sambar, they sell mixture which contains all spices, this way you don't have to spend a lot of time making it, some brands are better than others, recipe is on the box, get all the ingredients mentioned in it.
