Baked Aubergine & Mozzarella Bake in Tomato Sauce with Chicken Thighs and Roasted New Potatoes

This dish was inspired by a recent visit to an Italian Restaurant with friends. The Aubergine dish can be used as a starter on its own or as I did as part of a meal. If feeding a family then increase ingredients and make a larger bake. Truly delicious
