i play for a modified pitch mens league, would this work with clenchers and without windmilling?

Yes but you would have to generate distance with the legs. For slow pitch a knuckle ball might be more affective.

My daughter is struggling to throw her change-up consistently because she cuffs the ball. Any suggestions?

Absolutely!!! Can you send me an email with a video of her throwing it so I can be certain? But I would suggest grip or sequencing. My halfway to finish video would be good as well as maybe trying to switch up the grip a bit but I want to see her delivery to be certain.
