I used to be able to have a sysprepped vhdx gen1 drive (for Win8 and W2k12S) and I would just copy/paste it around whenever I needed to create a new preinstalled gen1 VM. Is it true that I cannot sysprep a gen2 vhdx and connect it to some new gen2 VM because of the UEFI? It just won't boot off it. What is your experience?

no. You can sysprep a generation 2 vm just fine and use it with other generation 2 vms. It just could not be used with a generation 1 vm.
