    Loving your vids, I have tried many of your mad recipe's some ok, some not so good. My question is have you ever tried to make a Tonic wine if so would love you to make a vid.

    When I brew with dewberries, I will use brown sugar and grape juice. The only reason I use the brown sugar is simply I can get it cheaper than white sugar. Cheaper is always a good thing. Also, I am not sure if it is a psychosomatic reaction or not, but I think the brown sugar produces a better product. LOL

      When baking, I substitute brown sugar for white quite often. Not because it's cheaper, but because I've found that the end product tastes better. =)

      well if you can get it cheaper then go for it :) you would think that a sugar that's less refined would be cheaper but that's not the case over here :/
      it all comes down to personal taste in the end as long as you like it then its made perfectly :)

      yes there is :) pick wild blackberries but I pick them on my own and when I have time so it takes days.
      it also helps break cell walls so more juicy flavors :)

    You got me thinking... what about including grape jelly or grape preserves when brewing a wine? Might be interesting.
    One thing that surprised me when making dragon's blood (cherry mead) is that I chopped the cherries up into 8 pieces each - lopped in half, pit removed, and then each half in quarters - and expected a lot of solids to strain out when I racked it after fermentation. To my surprise, the yeast had eaten away all of the solid parts of the cherries and there were basically no solids when I racked it!

      it's a little tricky to get grape jams and what not here, not to sure why as they are really nice. i bet they would make a pretty good addition to wines :)
      most of a cherry is water as the the alcohol increases all that liquid gets sucked out so makes for less crud to clear out :)
