[No Music] How to Make Lamb Stew

    Ingredients:
    3 lb lamb shoulder or neck, cut up for stew
    Salt, pepper, flour
    Small piece of lamb fat
    6 small carrots
    1 cup potato cut into cubes
    1 cup green peas
    1 large onion, diced
    4 garlic cloves, minced
    1.5 cups red wine
    1 lb button mushrooms, sliced
    4 cups chicken or beef broth
    ¼ cup chopped parsley
    1 tsp dried thyme
    Instructions:
    Cut off some fat from the lamb and fry the fat in a pot or dutch oven.
    Coat lamb pieces in flour, salt, and pepper.
    Cook the lamb pieces in the lamb fat until brown. Transfer the lamb to a plate.
    Add onion to the pot and sauté for 2 min.
    Add garlic and cook for 1 minute, stirring frequently.
    Add 1.5 cups red wine.
    Add the mushrooms. Cook for several minutes.
    Return lamb to the pot.
    Add 4 cups of broth.
    Add 1 tsp dried thyme.
    Add the potatoes and carrots.
    Simmer for 1 hr and 45 min.
    Add peas.
    Add parsley for garnish.
