The slight bitterness in the veg hakka noodles comes if someone hasn't cooked the cabbage properly. Its not unhygienic or anything, sometimes these guys tend to leave the cabbage a little raw for the texture but for me it's one of the potential turnoff. NOT all vegetarian hakka noodles are like this, and this is unconfirmed, I mean I don't know if they put cabbage in it or if it is just the spice, or a combo of the spice and the cabbage.
