However, about 80% of "uncountable" noun can be countable in some situations.

Great question! Since related to time is totally different than "since" as "because". For example, I have been playing hockey since I was a child" = this is related to time However, "Since her DNA was the scene, she was the main suspect" = in this situation, we have to decide if it is related to time or reason .
