  • Siri Paya, also known as Paya soup, is a traditional Pakistani and Indian dish made from trotters of goat or lamb. It's a hearty and flavorful soup that's perfect for a chilly day. Here's how you can make Siri Paya:
    Ingredients:
    4-6 lamb or goat trotters (cleaned and washed thoroughly)
    1 onion (finely chopped)
    1 tablespoon ginger paste
    1 tablespoon garlic paste
    2-3 tablespoons cooking oil
    1 teaspoon cumin seeds
    1 teaspoon coriander powder
    1 teaspoon red chili powder
    1 teaspoon turmeric powder
    2-3 black cardamom pods
    Salt (to taste)
    Water (enough to cover the trotters)
    For garnish:
    Chopped cilantro
    Lemon wedges
    Sliced ginger
    Instructions:
    In a large pot, heat the cooking oil over medium heat. Add the chopped onions and sauté until they turn translucent.
    Add the ginger paste and garlic paste to the pot and cook for another minute.
    Add the lamb or goat trotters to the pot and stir well to coat them with the onion and ginger-garlic paste.
    Add enough water to the pot to cover the trotters. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 1-2 hours or until the trotters are tender.
    Skim off any foam or impurities that rise to the surface of the soup.
    Add the cumin seeds, coriander powder, red chili powder, turmeric powder, and black cardamom pods to the pot. Stir well to combine.
    Add salt to taste and let the soup simmer for another 15-20 minutes.
    Once the trotters are tender and the soup has thickened, turn off the heat and let it cool down a bit.
    Serve hot, garnished with chopped cilantro, lemon wedges, and sliced ginger.
