I have been very excited to share one of my favorite homemade sweets' recipe. I have been a huge fan of Alpenliebe (caramel) hard candies since a very young age and after a lot of trial and error and experimenting, I have been able to recreate that amazing taste at home. I hope that you like this small and simple treat recipe and you recreate it for your family and friends over the Christmas season.
I have tried my best to break the recipe down so that it is very easy for even beginner cooks to try and recreate it at home. If you guys have any queries, please share them in the comments below and I will get back to you.
*WARNING - BE VERY CAREFUL WHEN WORKING WITH MELTED SUGAR AT VERY HIGH TEMPERATURES AS THEY CAN CAUSE SEVERE BURNS. PLEASE ONLY FOCUS ON THE TASK AT HAND AND DO NOT BE DISTRACTED IN ANY WAY WHEN HANDLING HOT MELTED SUGAR*

INGREDIENTS:
Sugar - 100 gms or ¼ cup + 1/8 cup
Water - 50 gms or ¼ cup
Liquid Glucose - 30 gms or approx. 3 Tbsp, use a wet measuring spoon. (you can order it from amazon - amzn.to/36pug0y)
Fresh cream - 65 gms or 4Tbsp
Vanilla essence - 5-6 drops
Butter - 20 gms or 1 Tbsp

Should have a small bowl of ice water right there in case you get any of the hot sugar on you. It will save a LOT OF FUTURE PAIN TIME.

I made this caramel, but cream used only 3tbsp, it's a very hard caramel. Make any difference 1tbsp of cream less or more??
