Just go to a stable. I'm not an expert on this, but he probably isn't considered dead in the games code, so a stable should be able to summon him back, although now that I think about it that might cause some problems, as it will try to delete the previous version of him, but if there is no previous version of him that might cause some problems such as an index error, but he might still be there, just unloaded. It's 50/50, but your best shot at getting him back is going to a stable.
I'm actually surprised the devs didn't use the same mechanic as the one in the plateau where if you try to leave it without the paraglyder you get void'd out
Perhaps they simply assumed the AirWalls were enough, which they'd want to use regardless; if they weren't there and you just voided out for going too far, that would seem jarring. :P

I checked on reddit and it turns out you can recall a horse from any stable, provided it is registered. If the Horse Fairy couldn't revive your horse, then chances are that despawning the horse didn't count as killing it. Taking into account the fact that video game actors are only a single instance of certain scripts and memory being read, your horse probably still exists in an intangible form. I am guessing that if you went to the stable and recalled your horse, it would spawn another instance.

Would the stables acknowledge Jero? I feel like it would let you summon him from there but maybe he has to be on the map.
Jero really went out of his way to say: aight, im bouta head out. And vanished without a trace. You cant make that stuff up. (Good video btw.)

Jero's probably going to reappear if you try to take a different horse from a stable and then try getting him at a stable.
