Ideally, you should be able to put those "bigger-better-best" planter things in the front store and just let the customers harvest their own. It would be a pick-your-own without the farm. I'll bet that would go over well... fresher than a farmers market.
There are no restockers in the game at the moment, apparently the AI for it is pretty hard to do. But you CAN manage your employees by clicking that gear icon in their panel (near where you hire/fire them). What you can't do is tell them to use or not use particular equipment, or add nutrients. Generally, with each new crop you'll get a quest to harvest 100 of them. Buying 10 of each new type of plant or fish when they become available generally does the trick. I tend to focus on growing Arugula ($7) and Barramundi ($25) since they make the most profit. You sell things by tapping the T button, and currently get back everything you paid. Those initial grow beds (Raft), are terrible and will cause you trouble when you start raising fish. Sell them now and get a total of six of those new ones, which are the best growbeds in the game for plants. The later growbeds are better for fish but worse for plants, usually much worse.
Dave, you could hang the pvc hydroponics on the walls and leave the treadmill in the room. So when you are running on the treadmill, you are in your very own forest. (And on the nerdy side: the CO2 you're exhailing while running will make the plants very happy and grow faster/better)
Maybe try clicking the cog under employees stats on the hire employees tab to manage employees? It looks interactive to me
