In Parks and Rec, whenever Ron was doing Duke Silver, that was actually Nick Offerman playing the saxophone. Ron playing the saxophone was supposed to be dubbed but since Nick could actually play, they didn't have to do that.
Meryl Streep in Music of the Heart. Not only did she have to learn to play the violin in less than 2 months but she performed at Carnegie Hall infront of 2000 extras including Itzhak Perlman, who was impressed by her playing.
Gary Busy in the Buddy Holly Story. I bought the soundtrack in middle school and wore it out. His version of maybe baby is better than the original. Ollie Vee as well.
This is showing my bias with the movie but again, Andrew Garfield literally trained for a full year to give justice to his portrayal of Jon Larson in Tick Tick Boom. Heck, his performance in the 'Why' scene was live and raw in the movie.

Russell Crowe in Master and Commander, he didn't have to learn how to play the violin for the movie but he did, which is not an easy instrument to learn to play. And he did a beautiful job,! And fit into the movie so perfectly.
Tom Hiddleston played guitar and sang in I Saw the Light. It’s a biopic of Hank Williams and Tom nails Hank’s voice and style. Almost no one saw that movie, which is unfortunate.

Oscar Isaac also learned how to play piano for E.W. a film that was directed by Madonna. o.o He's seen playing on screen a few times. Y'all missed that one. o.o It wasn't even in your honorable mentions... I actually don't think you had any.
They get paid to portray a character a certain way... They need to look and sound the part so just like getting jacked or skinny for a role, learning an instrument is another one of those things they get paid to do. It's probably also likely that they're paying for a professional tutor for some if not all of those hours per day. I'm not saying what they've done is impressive but if any of us who actually play instruments could dedicate the time and money actors do well, we'd be pretty good too. Now compare these guys to the likes of Johnny Depp, Keanu Reeves, Jamie Foxx etc... they're already talented before you give them a part...
You totally left out Robert Pattinson in Twilight. Not only does he really play the piano beautifully he had 2 songs on the soundtrack that were actually sung by him
