METHOD: MILK PAYA STEPS: 1. Heat Groundnut oil. FRY Onion, tej patta, add garlic paste, chopped tomato green chillies, & dahi. Add Paya & Gosht. Cook on slow flame. 2. ARQ: Separately cook KHUR + Hari mirch + Neembu. Strain the STOCK n separate out khur (to be added later). Throw away neembu Hari mirch. 3. KESAR: Add Kesar to Kewra Essence. Soak. Keep it for End. 4. NOW when tendered, Add Haldi, Ginger, Powdered Masala (kaju, khas, phutana, groundnut), Dhaniya powder. Cook till masala is well mixed. 5. Finally Add neembu michi ARQ & Paya Khur. MIX well while cooking it covered to make it thick so that milk can be added (to avoid milk curdling). Allow to cook for 1 - 2 hours till meat is well cooked. 6. Finish with Dhanya leaves, Zeera Kali mirch powder, Garam masala (special), Zafran kewra water.
