I don't claim to be an expert on this, but I read somewhere that we should eat our fruits on an empty stomach or 30-45 minutes before or after meals. The vegetable rice looks yummy though

The French calls it courgette but in America we call them zucchini (zoo-keen-e). The green stalks you call cauliflower we call broccoli. But the eggplant is also a good substitute for protein (meat).

Lentils have all the proteins and complex carbos, you need. They are a regular staple of my dinner, and go well with sauteed veggies and rice. Fresh fruit is always great, especially when they come from your own garden. This is a perfect use of the food pyramid, Joyce. I hope one day you'll write a cookbook!

Hi Joyce, I had just made the same dinner as you did. I sauteed scallions, (green onions), and garlic in olive oil (I no longer use margarine), and mixed all the ingredients together the same way you did. It was delish!!! Instead of the papaya I am having a melon. Bon Appétit!
