This is probably the best American-Chinese dish ever. The close second would be the General Tso's chicken (spelled differently depending on where in the US you are). I live in Europe now and there's nothing even close to it here, anywhere. I can cook American-Chinese myself, but I have never tried preparing orange beef. I should try it now!

I do not whisk the egg white, it's important to use just enough to coat the beef so the cornstarch holds to it.
Orange Beef in USA different. They use tiny red tai chili's for hear. peeled oranfe rind cooked at high temp and surround with quick stir fry broccoli...only issue is they deep fy the beef 70% of time..some will stir fry..mbut mostly not..prefer stir fry less oil.

Chef do you whisk the egg whites just a tad to get them slightly foamy before mixing it in with the beef and cornstarch?
I am surprised that there is no orange juice!
So I have thought about using a wok more often for cooking, but part of the problem is I'm not quite sure what to do with the set up. Since I have an electric stove. Any advice?
@thewonderwok: If you do use orange juice, how much do you use? I've tried using orange juice in Orange Chicken or Orange Beef, but the result of which doesn't make the dish taste like the restaurants' version. Too orange juice tasting. :-( Do you feel that it's better to stick to orange zest or rines?

Yes I do save the oil, I run it thru cheese cloth to filter it out. It has a lot of flavor to it,
As it breaks down and get to thin or really dark thats when I will discard.

Hi Greg. I just found your feed. How much is the set up with the outdoor wok? Did you design it yourself, or did you buy it? Can you post a detailed video on the setup? I have found that I cant get the Wok Heh? or the carcinogenic lol taste (jj?) without the BTUs that would be present in a restaurant kitchen ...

I LOVE Orange Beef. That and Sesame Beef. Chicken gets a bit tiring.
Wow... It's like torture watching you work! Especially that nothing sticks in your wok... I'm having a really hard time getting mine seasoned enough to make it totally nonstick... It's a bummer! Great video, though, Greg!
