na verdade a piridina não reage por SEAr em meio ácido, portanto o primeiro mecanismo não acontece.

Why can’t the nitrogen in pyridine at 13:30 also use it’s lone pair to stabilise the carbocation, why is only the amine group allowed to do this?

the lone pair doesn't belong to aromatic pi system.
