I like to make a huge batch of Alfredo when I make it. I used a package of cream cheese and melt it with the butter and mix in the cream and Parmesan with it. Makes a nice flavorful sauce.

I made spaghetti squash a few days ago, I was trying to come up with ideas as to how to prepare it so I decided to try the Alfredo sauce, I had a little of this and a little of that so I mixed some cream cheese, about 1/2 can of coconut milk, some heavy cream, some ev olive oil, some parmesan, mozzarella cheese, and some left over roast chicken, it turned out delicious. Just stumbled up on your recipe, so I'll be trying it out next time.

Poke a few fork holes in the fresh and put the squash in the microwave for 5 minutes, then cut it in half (preferably through the fork holes so the squash liquids don't leak out.)
I made this today but I like bold flavors so I increased ingredients accordingly - added 6 T more butter, 2T more garlic powder, 1t Himalayan salt, 6T more Parmesan Cheese. Much bolder - for those that like bold flavors.
Looks delicious will try this...However, it may have been easier and quicker to have pierced the Squash and put it in the microwave for 12 mins to soften then open it as when it is softer it would have been easier to cut it in half, take the seeds out and scrape the spaghetti. Just reduces the cooking time..x
Just a hint for a more authentic looking vegetable pasta...cut the squash the other way straight through the middle for longer and authentic looking spaghetti...by cutting it the long way, you’re making little choppy pieces. Also, after cutting the squash, spoon out the seeds, invert the cut ends down on a Pyrex baking dish, add a little bit of water, and roast in the oven for about 40 minutes, more or less depending on the size of the squash...no need for the aluminum foil, since the skin will perfectly steam the squash.
easier way to process that bad boy is to poke it a bunch of times like a potato and then put in microwave 12 min let it cool and cut in half nice and easy
I use a rubber mallet to hammer a large knife through the squash. That is easier and safer in my opinion. The worse thing about spaghetti squash to me is it is so waterlogged. I cook mine cut side up, without a covering to help the water to evaporate. YMMV.

You struggle slicing around that spaghetti squash. An expensive but good stainless steel chef knife (8 or 10 inch long) is a Victorinox chef knife with a fibrox handle. Can be purchased off Amazon less than $50. An easy way to cook those spaghetti squash is poke a half dozen holes around the squash and place it in a microwave for 4 to 5 minutes a pound. Let it cool a few minutes before cutting it.
That looks so good! I can't find spaggetti squash here in the UK, so I guess I'll have to try this using zoodles or boodles , which would you recommend?
+Claire Thomas Not a fan of beetroot, so the Zoodles would be my choice :) There's only one company over here that grow and distribute the spaghetti squash, and they insist on calling it vegetable spaghetti. If you want it low fat, instead of the 3Tbsp butter and 1 cup heavy cream you could use 1Tbsp extra virgin olive oil, 1 cup broth and half a cup skim milk. You might need to add a tablespoon or two of cornstarch to thicken it a bit though. Alternatively, there are low fat Alfredo sauce recipes online and you could just use one of those for the sauce served over the spaghetti squash noodles. Good luck! :)
good lord, that cutting is a disaster waiting to happen, cut the stem end off, you then have a flat surface to work with. She is gonna chop her finger off cutting that squash like that.....
This method of cutting is not particularly safe. Baton the knife through the squash. Takes 5 seconds. If your knife won’t stand being knocked through the squash, get another knife.
