Healthy and Easy Chocolate Chip Cookies

  • Hi everyone! Today I’ll be showing you how to make a simple and easy healthy chocolate chip cookie recipe!
    Ingredients:
    2 cups of blanched almond flour or oat flour
    - ¼ cup of cornstarch
    1 tsp baking powder
    Dash of Vanilla extract
    6 tbsp pure maple syrup or honey or ½ tsp of stevia sweetener
    2 tbsp avocado oil or olive oil
    ¼ cup coconut milk or any low-fat milk of choice
    ½ cup semi-sweet chocolate chips or dark chocolate chips
    Optional toppings: nuts or berries of choice
    Instructions:
    1. Preheat oven to 350 degrees Fahrenheit.
    2. In a large bowl, combine almond flour, cornstarch, and baking powder. Mix well.
    3. In a small bowl, mix together maple syrup and avocado oil.
    4. Add oil and syrup mixture to the dry ingredients, along with vanilla and coconut milk. Mix well.
    5. Now fold in chocolate chips until chips are well distributed.
    6. Now on a baking tray lined with parchment paper, form approximately 15-16 equal sized cookies. Place each one on the tray and press lightly them into a cookie shape.
    7. Bake for about 12-15 minutes or until they are a light brown shade on top. Then, cool completely before serving.
    Storage:
    In an airtight container for up to a week, in the fridge for up to 2 weeks or the freezer for up to 6 months.
