Garfyspy, i would recommend a 140 lb pound press paper. cold or hot press depending on if you want smooth or textured paper. if price is not an issue, arches makes fantastic 100% cotton paper. it comes in blocks, tablets, and individual shetets for larger sizes. you can really work it. canson is good also. try not
I use 100% cotton rag paper 300 or 600 gsm (140 or 300 lbs). Fabriano Artistico and Saunders Waterford are great and affordable if you can find them, but anything "100% cotton" will be miles better than normal paper. Watercolor papers have three kinds of surface: Hot Pressed (very smooth, dries fast, I do not recommend it for training), Cold Pressed (mild roughness, my favorite) and Rough (great for some textured effects, not so great for detailing).
