Raccoons will stop at nothing--including scaling fences--to get sweetcorn. They always seem to strike about a day before the sweetcorn is ready, so I'm thinking maybe baby corn will avoid that fate. I'll give it a try next year Greetings from Pennsylvania.

i just noticed the aerial roots on the corn. do you ever notice a gel growing on them? some corn have aerial roots like that and they get a get substance that has nitrogen fixing bacteria that feeds the corn nitrogen in exchange for sugars.
The problem I have growing corn - I live next to a forest - is that a few days before I'm ready to harvest, skunks and raccoons come and get the crop before I do. I wouldn't even mind if they took a few ears and ate them, but they take just one bite out of every ear they can find.

My family is diaspora cubans and growing up I remember we always had a jar of pickled babycorn, thinly sliced onions and sweet carrots, it was called "encurtido" and it basically used the same way you would use sauerkraut. For the longest time, i didn't know babycorn could be grilled.
Many accounts of the native Americans tell of the green corn festivals and dishes made from immature ears of corn. Makes sense to use it like a vegetable, I had no idea these specific varieties existed. Figures these varieties do exist though, corn being one of those super developed plants. Based on this video, I just got chires seeds from Baker Creek to try out next year. Fingers crossed, I hope I'm successful! (Zone 9b, N. California.) I have noticed that I've had way more success with cherry tomatoes than large tomatoes, and small varieties of peppers rather than full-size bell peppers.
A fun tip for removing tassels from corn: Shortly after the tassel emerges, firmly grasp the smooth tassel stalk just below the lower tassels and slowly pull straight up. They will slide right out.

you can stir fry baby corn even with its silk intact, the silk is super flavorful . Salad, roast, deep fried, stir fry, it’s such a versatile veggie

Top tip is to harvest the pollen using a small vacuum and with a paint brush hand pollinate the corn! 🌽 dragon fruit grows use this technique.❤

Probably not. This is an heirloom variety, not a common hybrid.
