Hope this helps you, recipe and instructions: Marinate sauce 2tbsp soy sauce 1 tsp rice vinegar 1 tsp grated ginger 1 tbsp sesame oil 1 tbsp mirin Nori 1 tbsp kombudashi Cook sushi rice with kombu( dried kelp ) or kombudashi . 1 to one ratio rice and water , 1 and third cup rice makes two rolls almost. In hot water soak raw cashews For tuna use 2 red beefsteak tomatoes, put X mark on the bottom and a thin cut on each side then put them in hot boiling water, after the skin starts peeling put the tomatoes in iced water and wait until they cool down, peel them, remove all seeds and excess water, then chop in small pieces and add to the marinate sauce. Let marinate in the fridge at least an hour to overnight. Spicy mayo: The soaked Cashews Soy milk Nutritional yeast Spicy hot sauce Mustard Add one clove garlic optional No specific measurements provided. Also you can mix vegan mayo and ketchup as alternative. When rice is ready: add together this mixture of: 1 tbsp rice vinegar 1/2 tbsp sugar Pinch of salt Mix rice with This mixture very well To put together: Get a sheet of nori and a bamboo stick Place nori smooth side down on the bamboo stick, then wet hands with water before picking up the rice and lay it down on the nori, leave one inch of space on top without rice Place the sushi mixture in the middle of the rice in one horizontal line , then roll tightly until you have a roll Get wet towel on a plate, and sharp knife Cut roll into half, then each half into another half while remembering to clean knife in the wet towel between each cut! To garnish chop chives and sprinkle on top plus spicy mayo Enjoy

i made this recipe as a meat eater (broke, no fish) , and added fish sauce to the tomato mixture, very tasty! with the fish sauce it actually tastes more authentic than i thought it would. 8/10 compared to vegetarian sushi, 5/10 compared to fish sushi. really clean and easy recipe, i didn't even roll it up, ate it like poki, great recipe and would recommend to anyone
So I followed this for the tomatoes and the rice and made a sushi bowl out of it with avocado and roasted seaweed and regular spicy mayo and man oh mannnn it’s so good when you are craving spicy tuna but can’t eat it temporarily or simply afford it. All I need is the little crispy things they use and it’ll be complete. Also! I used Roma tomatoes which have less “juice” on the inside so I was able to use the whole tomato and it still was the perfect texture

A full 24 hours of marinating made a noticeable difference in the flavor so that will be my plan moving forward. I don’t have kombu dashi, but I do have kelp powder. Are they similar enough to sub? I don’t know what kind of kelp my powder comes from, I originally bought it at a health food store because it provides high levels of micronutrients to plants. I have kombu strips and they definitely don’t taste the same.
Hey there, sorry for the late reply. Yes! You can absolutely use kelp powder, that’s actually what’s used in most plant based seafood alternatives👍 You can put your kombu strips in the water to cook the tomatoes and/or in the marinade.

The comment, "Even rotten it's still tai" is an old Japanese saying from the times when you could still get real tai fish (now they almost always substitute orange roughy or red snapper, which looks like tai, but definitely doesn't taste like tai. Tai was the best tasting fish for both sushi, and other things, and it gained something close to mythical status. They say it still tasted good even when it was starting to rot. The saying, "even rotten it's still tai" that it's something good no matter how bad it is. If you enjoy your life even when really bad thing are going on in it, you could say about life that, "even rotten, it's still tai". If something is really different from what is traditional you could say, "even rotten it's still tai" That's kind of what I was getting at with my comment. Maybe vegan sushi isn't quite traditional sushi, but, hey, it's still sushi, and it's still good! Even rotten, it's still tai!!!" Just an interesting fun fact. :)

That would add more of the kombu flavor to the tomatoes so that would be great! I’d say doing that with nori is more essential!
Well, yes in a sense. The term dashi is just pretty tricky😂 It means the “flavor” of soup/sauce but they also call the powder dashi hahah
