I made a graf similar to this (8.5oz of Pilsner DME boiled in 3 cups water with 2.8g lemondrop hops + yeast nutrient boiled then added to 13 cups apple juice w US-05 yeast) back in May, seeing this in late September. I had trouble describing and finding the exact flavor in the first couple bottles I opened and I think you really hit it on the head about this - stopping trying to pick apart apple and beer mixed but just drinking it as its own thing instead. Currently drinking one of mine 4 months after brewing and with a couple months age the flavor on these really comes together nicely! I'm going to have to try adding the cinnamon. It's a great use for some extra DME or extra bit of wort for a fun less common drink to have in your homebrew collection.
Nice experiment! Not sure if i'd brew it, but i think i try blending Beer and Cider to a Cy-Beer ahm... Beerder(?) and put some cinammon on top XD Ok... but IF i'd brew it, i think i would go with the cinammon stick in secondary right away :) Still, it's weird and i like weird! Cheers!
Cheers! And y'know, I'm actually really glad to see someone thinking they probably won't brew this at home. That way I know I'm not coming across too much like a salesman haha If *all* the comments were people excited to brew this themselves (especially on a weirder one like this - that I enjoy, but that probably isn't for everyone), I'd be worried I had been overly generous in my tasting notes
Because you added honey as your priming sugar and the graf retained some degree of chracter I feel like you just alchemied a new concoction. Graf/cyser....your call but my vote would be a gyraff (pronounced giraffe)....especially if it leaves long legs on the side of the glass.🤔

I like to steep spices in vodka and add it to secondary when making a graf. It's a fun drink to make and perfect for a cool autumn evening.
