Plain Biryani Masala preparation 1. Add 8 fried onions in a pan along with 1 serving spoon ginger garlic paste 2. 1 pinch of turmeric powder, 2 tbsp mirchi powder, 2 lemons juice and finely chopped corainder and mint leaves 3. 1 serving spoon Garam masala, 1/2 tbsp shah jeera , 3-4 tbsp oil, 1tbsp salt, 1/2 tbsp elachi powder(cardamon) 4. 200g curd for 1kg biryani. Mix all these items nicely until no chunks of curd are left. This is the masala prep for the biryani Rice Preparation (First boiling water) 1.Add 5 biryani leaves, 2inch cinammon stick(broken into small pieces) 2.4 star anise, 2 mace, small amounts of shah jeera, lavanga ,cardammon 3. Add salt based on the water in this vid for kg rice he used 4 litres of water so enough salt for the water check the taste 4. Add kg soaked rice(before hand) and mix only once! 5. Add some of this hot water 2-3 ganti(laddle) to the masala prep in previous section( he used 4 with the laddle in the video) 1. Check salt of the masala if not enough add some 2. Remove half of the masala into seperate bowl 3. Cook rice till 30-40% then add a layer of rice to the masala in the pan 4. Next batch of rice should be cooked till 70-80% add that also to the pan as layers 5. After adding more than half quanity of rice add the masala seperated into a bowl to the pan again spread evenly 6. Remaining rice should be cooked till 95% and that should be added to the pan as well. 7. Use the rice water which was used for cooking rice add 2-3 tbsp of it. 8. Garnish with small amount of coriander and mint leaves. 9. Dum the pan with the help of a tawa and high flame about 7 mins
TLDR not easy to make this at home as you would need the yellow gravy before hand and also know how to cook rice in percentages for biryani and also some wok tossing skills required
