I think it would give him the perspective to make much accessible food. If you want non-vegans to eat at your restaurant, you need to have an understanding of where an omnivore is coming from when they walk in. Their expectations will be very different from someone committed to a vegan lifestyle.
Man, I wish we could have seen what went it the preparation of those three main dishes- I wonder what the sauce was made from that goes on the mushroom while it's being grill? Oh well, maybe on your next visit!
