If done right you'd never taste the difference between premade bar cocktails and a fresh one. You're still getting the fresh garnish, citrus oil and bitters, this just cuts the measuring of liquids part and lets you have the taste be the same for all the drinks.
I think he's commenting on watering down drinks that will later go in ice. Pure greed, I hope his kegs are stolen

@@benblair2591 Every cocktail is watered down. a classic negroni is also watered down before being served over ice. Stirred for dilution -> strained over ice
**** update! I watched the whole video and he said that the negroni keg usually lasts two weeks and it has been filled a few days ago. He was just topping it up for the video, the amount he added was for about 50 cocktails, but the whole keg serves 200. So this is only a quarter of the keg.
I'm very confused by this math, how is this 200 cocktails? Wouldn't it be closer to 50?
6 bottles of spirits, probably 70cl each.
That'd give roughly 4.2litres.
There's ~30oz/40 shots (25ml each) per litre, so it'd be 120-160ish measures.
@@RJ-wx3fhStandard liquor bottles are 750ml (75cl), so that's 4.5l, then 1,500ml water brings it up to about 6l. Divide that by 25ml gets you to 240 standard shot measures, or given the dilution, 180 measures that contain one shot's worth of liquor.

Does anyone know the shelf life of a cocktail in a keg like that? And I'm guessing no2 for the gas?
The vermouth is the only thing that isn’t shelf stable, if you put an open bottle in the fridge is lasts for up to a month so that would be my guess. If they used No2 it would probably be indefinite since it wouldn’t oxidize much.
The long form vid says they batch at least weekly if not every other day i think
Shelf life would be indefinite. No oxygen, no light, constant refrigeration.
Without fruit juices or anything in a batched cocktail it can last for weeks but these guys go through those kegs every couple days any way
He said in the longer video that the negroni lasts two weeks

I don’t understand the math here. Two bottles (I’m assuming it’s a 5th) is about 50 ounces. A standard Negroni contains one ounce each ingredient (gin, vermouth, Campari), so by that math you should be getting 50 cocktails, not 200.
Bottle pictured in the video is a handle but a fifth.
@@michaelrondon5472 Math still doesn’t check out. Two handles is 120 ounces, so you should get 120 drinks. He said he’ll get between 150-200 drinks out of that keg. The guy is cheating his customers.
@@devonwelch8014 2 bottles of each of those liqours. Plus water so multiply your maths more.
In the longer video he said that this batch was made a few days ago, so he was just topping it up. This was about 1/4 of the whole keg. For the old fashion he used 12 bottles of Woodford reserve bourbon.
In goes 2 bottles of gin and out comes 200 old fashioned? That’s quite a feat.

New York tap water isn’t even in the top 10. It’s sad because Ohio was deemed the best by the Berkeley springs international water tasting, before the unfortunate derailment.

It's a necessary dilution since they are refrigerating it to account for the ice that would have melted when stirring in a glass. Pretty common for batch cocktails.
@@danbrellis thank you for clarifying! Question: wouldn't it be better to just add the ice when pouring it in the glass? Asking out of curiosity!
@@sergioaugustoangelini9326 since they keep the keg in the fridge it's already at (or close to) serving temp, so stirring it with ice wouldn't get enough dilution. Listen again and he even says he's not adding the full dilution because they serve it on ice to allow for some minimal melting.
@@sergioaugustoangelini9326 you could keep the keg at room temp and stir each cocktail as it comes out to chill it, but the whole point of this keg approach is for speed and efficiency at a busy bar

This is only for a few drinks they do. Old fashioned and negroni. If you watch the full video theres a lot of cocktails they make to order.
No you have no understanding of the concept it’s literally prebatching contents to minimize pickups on drinks, it’s more consistent and more efficient, booze is shelf stable so there is no problem with doing it this way, Citrus and sugar are added during the shake
Been working as a bartender for 5 years and I’ve prebatched (on a smaller scale) cocktails before to save the trouble of pouring like 3 different liquors
It’s totally fine and doesn’t change the drink at all, it’s super helpful for us and gets you your drink quicker

Where do you live? In much of the western hemisphere tap water is clean, bottled water is often tap water and just a scam to sell more plastic.
This is a pretty fancy bar, they probably have a filtration system on the tap.

water is actually an integral part for most cocktails. it's not often listed as an ingredient because when you shake with ice, it gets added there. but if you're batching a cocktail, diluting it like this is important and completely standard. just because you don't understand how it works doesn't mean he's a terrible bartender
@@mschuhler don’t patronise me, I’ve worked in hospitality for my entire adult life so far and I’m currently managing a bar. I’m very well aware of the role of ice/water in mixology. I’ve just never worked for establishment who stoop to the level of pre-made batch cocktails… even for events. It’s a terrible bartender/establishment that thinks this is acceptable practice.
@@stephenmason3853 it’s fair enough if they’re a low end establishment and want to make their drinks cheap, but I bet this guy will still charge a high price for these pre mixed ones, in which case I agree it’s a bit dodgy.
