Yeeah I'm in a similar boat, absolutely loved the pacifist boss, but throughout the entire fight I was just going "wtf?? These attacks are physically impossible to dodge" and then I randomly dashed by pure accident :/
Even though it took me several hours, I'm glad I could beat both of her phases in one session without Gunpowder, the Golden Bandana or any other Golden Item.
This must’ve been hard cause some of the attacks like the glass panes and some that you simply have to go fast or have the invincibility make it easier you have to use dash on

Do a no dashing with rubber bullets the revolver is allowed but if you want it to be harder use sling shot also don’t use soul bullets if you use it by accident that’ll be fine but try not to use it and try to use only the rubber ammo for phase 2
if I'm gonna be honest the dash mechanics lacked an insane amount of polish and were so poorly implemented that the game would've just been better if it didn't exist in the first place

This fight is tough as heck even WITH dashing, it’s extremely impressive you managed to go without. Great job.
With the secret armor piece and the new endure option, you can pretty much just tank your way through this fight
and then theres me who can barely beat this normally
there’s me who had to do it on easy mode twice and still took a full inventory of the game’s best healing items with golden bandana

From what I remember you need to be playing in the latest version of the game to get endurance, maybe you got the early version of UTY
