  • Punjabi style chicken curry is a spice chicken dish from the northern planes of India. Aromatic and flavoured with hing (asafoetida) and lots of freshly crushed black pepper, the dish packs a punch.
    It goes very well with our carrot and dry fruits pulao, complimenting the sweetness of the raisins.

    Ingredients
    1) Chicken -750 grams
    2) Onions - 2 medium sized, chopped
    3) Garlic paste - 1.5 tbsp
    4) Ginger paste - 1 tbsp
    5) Green chillies - 3-4
    6) Tomato - 2, chopped
    7) Hing- 1 tsp
    8) Turmeric powder - 1 tsp
    9) Coriander powder - 1 tbsp
    10) Kashmiri red chilly powder - 1.5 tbsp
    11) Black Pepper (freshly crushed) - 2 tbsp
    12) Bay leaves - 2
    13) Salt - as per taste
    14) Mustard oil - Quarter cup
    15) Ghee - 1 tbsp
    16) Juice of half a lime
    17) Fresh coriander leaves for garnishing
    Method
    Temper mustard oil and ghee with hing, bay leaves.
    Fry off garlic and ginger paste for 30-40 seconds till they are fragrant.
    Add chopped onions , and slit green chillies.
    Fry the onions till golden brown.
    Add chopped tomatoes, and cook the tomatoes till they are soft.
    Add the powdered masalas, with a little bit of water and cooked the tomatoes with the masalas.
    Once the tomatoes are soft and almost forms a puree add the chicken and fry with the fried onions, tomatoes and the masalas.
    Add salt.
    Cover and cook for 5 minutes on low to medium till the chicken releases its own water.
    Uncover and cook chicken on medium heat stirring continuously.
    Add the freshly crushed black pepper at this stage. Do not use final grounded black pepper as that will alter the colour of the curry.
    Fry the chicken properly along with the black pepper.
    Add about half a cup of warm water, cover and cook on low heat till chicken is cooked through.
    Add a dash of lime juice before turning off the heat. The lime juice will freshen everything up and wake up the flavours.
    Garnish with fresh coriander leaves.
    Cover for 5 minutes for the flavours to blend, before serving.
