Cream puffs without butter with Chantilly cream and mascarpone

    INGREDIENTS
    CHOUX PASTA
    250 g of water (room temperature)
    80 g oil
    pinch of salt
    160 g 00 flour
    4 medium eggs (215 g)
    CREAM
    3 whole eggs
    140 g sugar
    50 starch
    1 sachet of vanillin
    500 g of milk
    250 g fresh cream
    250 mascarpone
    2 tablespoons icing sugar
    To make the choux pastry, put the water, pinch of salt and oil in a bowl... bring to the heat and bring the water to the boil... when there are several bubbles, pour in the flour, all together... .turn and in a short time 1..2 minutes....a moist and compact ball is formed.....a film also forms at the bottom of the pan...it's ready...now pour in another bowl and let it cool...well
    now pour one egg at a time.....at first the dough seems to divide, but then it comes together like a cream (also in 2...3 minutes)....now you can add the next egg.... if they are medium 4 are fine.....if you have large eggs, weigh them, reach 215...220 gr....(when you do the test, raise the spoon and the dough forms a beak, triangle shape , and it holds....).....now form the cream puffs and make 3 turns...or with teaspoons...making them nice and full....they didn't all come out the same for me either, but they are beautiful anyway...try them and you'll see that making choux pastry...you'll like it a lot...it's magic...then have fun🤗🤗😍

      Si Alessandra prova ....ho usato uova medie .....mi regolo meglio.... l impasto deve essere morbido , ma non troppo, se no poi quando li fai perdono la forma ....adesso scrivo qualche dettaglio in più in descrizione.....anche solo con crema sono buonissimi....buona serata🤗🤗😍
