    Ingredients:
    Rice Pudding:
    3/4 cup long grain sweet rice (also called glutinous or sticky rice)
    3 3/4 cups water
    15 oz can black-eyed peas
    2 Tbsp + 1/2 cup sugar
    1 1/2 Tbsp tapioca starch + 2 Tbsp water
    1/4 tsp vanilla extract
    Coconut Milk:
    5.6 oz can coconut milk
    3/4 can water (1/2 cup)
    1 Tbsp tapioca starch
    1 Tbsp sugar
    1/8 tsp salt
    Yields: 4 servings

    We make the rice pudding using sweet rice, also called sticky rice. Any brand will work just make sure you buy the long-grain variety.

    Hello Veronica, sweet rice is a type of rice and it's also called glutinous rice or sticky rice because of its texture. It's called gạo nếp in Vietnamese. It's very easy to find in the Asian grocery stores and is usually stocked with the regular rice. There are 2 common types: long grain (which is what you need for this recipe) and short grain (sushi rice) Most of the brands of sweet rice are products of Thailand including the brands I use.     Everyone using raw hard black eyed beans, please boil them until they are tender and soft before continuing on! Don't make the same mistake I made. She had her black eyed beans from a can so they were already soft.

    Hi trang! Thanks for relying! I thought it may have been sticky rice, I was just confused because I've never heard it being called sweet rice before! My mum has these products at home so I'll be sure to try out your recipe!! :)

    Thank you for the recipe. It's very clear and easy to follow. I tried it and it tastes pretty good, except for the coconut milk to pour on top, I would omit adding the 3/4 can of water because it makes it too liquid and I like it thicker.

    Thanks for the recipe. It looks so simple, I would like to give it a try. Do you have to soak the sweet rice overnight or a certain time before we can use it?

      There's no need to soak the rice in advance. Just rinse it and cook per the directions. Good Luck!

      Use sweet rice. Jasmine rice doesn't have enough starch to yield the pudding consistency.

      It's a different type of rice, usually it will state "sweet glutinous rice" or just "sweet rice
