I have to try this. I always am on the lookout for whole chicken prices to be fair at the store. Sometimes they are good and around $7, sometimes they are like $20 for a chicken. At $20 mine as well just buy a $5 rotisserie chicken. When I see a good price again, I'll buy one, and try your method! It looks so tasty! I'll have to slightly adjust the cook for my grills (no smoker yet).
I recently bought a Treager pro 575, I also have a Big Green Egg. I am disappointed in the Treager, I can't get much smoke flavor when I cook. I have tried quite a few different pellet flavors and none really give much of a smoke flavor.
Ya, I’ve heard it said “there’s no smoke like the real thing” and there’s no doubt about that… Can’t beat the ease of flippin a switch but not the same.

Good stuff my man. I did a chicken last weekend and it was the first time I dry brined overnight. Made a huge difference. Keep it up!!!
