How to Do Easy MEAL PREP for Backpacking | Miranda in the Wild

  • No dehydrator? No problem! Here’s an easy-prep, minimal waste, plant-based meal plan that can be adapted for more days - or varied diets - on the trail. I’ll show you how to pack and make three full meals: Trail Mix Oatmeal, Peanut Noodles, and Couscous with Lentils. Let’s cook! Disclaimer: I am not a chef, a cook, or a nutritionist.     Oatmeal: Small Stasher Bag
    1 cup Quick Rolled Oats
    2 tbsp Brown Sugar
    ¼ tsp Cinnamon
    Trail Mix: Small Stasher Bag
    1 cup Trail Mix of choice
    OR
    ¼ cup Pepitas
    ¼ cup Dried Cranberries
    ¼ cup Chocolate Chunks
    ¼ cup Coconut Flakes
    Pasta: Medium Stasher Bag
    1.5 cup Penne Pasta
    Snack Bag: Medium Stasher Bag
    12 p. Dried Mango
    8 p. Dried Ginger
    1 cup Banana Chips
    ¼ cup Peanuts or Cashews (raw, roasted, or salted - up to you!)
    Couscous: Medium Stasher Bag
    2 cup Couscous, dry
    Lentils and Vegetables: Medium Stasher Bag
    1 cup Lentils, Red Split or Quick Cooking
    1 cup Dried Vegetables (veggies only, no beans)
    1 tbsp Curry Powder of choice
    1 tsp Red Chili Flakes
    Peanut Butter Powder: 2oz Nalgene
    ¼ cup Peanut Butter Powder
    Oil: 2oz Nalgene
    ¼ cup Olive or Avocado Oil
    Soy Sauce: 2oz Nalgene
    ¼ cup Tamari, Soy Sauce, or Liquid Aminos
    (opt.) Crispy Onion: 2oz Nalgene
    ¼ cup Crispy onion, fried onion, or other topping
    Morning:
    1. Add ¾ cup pasta and 1.5 - 2 cups of water (more if you like thinner oatmeal or a big mug of coffee) to a pot. Bring to a boil, reduce heat, and let simmer for 8 minutes or until pasta is al dente.
    2. Turn off heat and strain water out of pot and into coffee cup. Leave the noods in the pot and cover to stay warm.
    3. OATMEAL: Add ½ cup of oatmeal and ½ - 1 cup of the hot starch water to a bowl with a lid. Cover, and let sit for 5 minutes or until oats have absorbed all the water. Add instant coffee or tea to the remaining water in your cup and enjoy some caffeine while you wait!
    4. Once oats are cooked, add trail mix. I tend to add around ¼ cup of mix-ins.
    5. Eat, enjoy, and camp clean your bowl.
    6. NOODLES: Add cooked noodles, 2 tbsp powdered peanut butter and 2 tbsp soy sauce to your bowl. Mix. Add oil to taste - around 1 tbsp. OPT: add crispy onions and peanuts. If you have red pepper flakes, add these too. Cover and store until lunch.
    Evening:
    1. Bring 2 cups water and ½ cup of lentil and vegetable mix to a boil. Cover, and simmer for 5 - 7 minutes or until lentils are mostly cooked. If you have a sensitive stomach or want softer lentils, cook for longer - up to 15 minutes.
    2. Turn off heat and add ½ cup of couscous. Stir, cover, and wait 10 minutes. Crack a beer!
    3. Once couscous has cooked, add oil to taste. Eat and enjoy!

    I saw my first Miranda video about camp coffee and now after watching this, I finally understand the coffee with pasta water comment 🤣. You make backpacking approachable and I love that you use reusable plastic bags like I do and make vegan food. I totally would backpack with you in Utah and We'd crack a beer together waiting for the water to boil lol 🍻

    As someone who recently found out that they are allergic to wheat and gluten...lentil and chick pea pasta have been great camping food. They have natural plant protein too! I like having it with two tablespoons of pesto and some olive oil

    Yay another plant based hiker! I have mostly car camped, but did my first backpacking trip last month. I made some similar choices for my meals and now I have some additional ideas. Do you ever use the commercial dehydrated meals? There are some that do not have meat or dairy but they are more challenging to find depending on which store one frequents. If you do use the ready meals, which are your favorite? Either brand or specific meal. Thanks!!!

      Hooray for plant-based! I try to make my own backpacking food whenever possible, but definitely have some store-bought favorites. I'm a huge fan of Good To-Go meals (the herbed mushroom risotto is SO good) and the Pad Thai Veggie from Backpacker's Pantry. You can actually search for vegan backpacking meals on REI.com! - Miranda

    I love this. If you want to avoid processed sugar, you can use date sugar (which is a whole food) for your oatmeal. Highly recommend it!

    I love how SIMPLE you keep this.
    As a person with celiac disease i can't choose the same noodles or couscous, but seeing you do this helps me understand the principles. Split red lentils do sound perfect!

    Love these ideas. Thanks a BUNCH. I have Celiac, so MUST be gluten free. A suggestion for the dinner would be to add quinoa vs couscous. I also add a bit of dried milk powder and a touch of brown sugar to my pre-mixed instant oats before I leave the house. - Cheers

    I dehydrate my own chili for backpacking. I add ground turkey, beans, tomatoes, quinoa, corn, and a bunch of seasonings. Even after rehydration, it's hard to tell the difference between that and when it's freshly made

    I always shy away from cooked meals for lunch, but cooking one's lunch pasta at breakfast is a great idea. Beats a peanut butter and jelly bagel!

    Can you go in depth about seasoning more? When I'm backpacking I will literally eat anything but when you prep from home you can obviously get a little more creative... the problem is, I'm hopeless at cooking in real life too. That doesn't exactly bode well when I bring friends backpacking. ALSO, a video on beer/drink pairings with our favorite trail snacks or meals? You are the best thank you!!!!

    Would love to know more about dehydrating portions. It sounds like you're tracking calories in this, and I am still trying to understand how dehydrated foods would equal out to fresh produce, nutrients-wise.

    Isnt it more logical to first boil all the water, than pour some into the coffee cup, and make the oatmeal in the bowl. The water left for the pasta is now boiling and you can put salt in it with the pasta until its done

    I like my oatmill to be a little sweet and creamy, so when I bag it up, I add a teaspoon of sweetener, ideal sweetener is my favorite and a tablespoon of coffee creamer.

    Nicely done as always. Lots of humor, a bit of attitude, and good information all wrapped up in a medium sized stasher. I bought a dehydrator and would like some ideas on what to do with it if you have time on a rainy day.

    Ah, fun! But I sold my dehydrator a while ago. I'm only 15 minutes from the Cary REI, so for dinner: pouches - add water and stir. If it's cold, raining, windy + rain, boiling water is the best I'm gonna do! Breakfast is always some variation of oatmeal, often with too much brown sugar.. and "lunch" = trail snacks: gorp, bars, cheese, nuts, dried fruit... Oh, trail snacks = most of my meat - varieties of jerky or summer sausage.

    I just tried a new dessert. I put a Jello pudding packet in a freezer bag with 1/3 cup of NIDO. On trail add 10oz of cold water into bag and stir with a spoon for a couple minutes. Have pudding in about 10 minutes.

    haha I really don't like oatmeal for breakfast but it's so handy for backpacking. I often just crack some eggs in a water bottle, Pre chop some veggies and make a omelette wrap. ooh and bean flakes are awesome! Great video!

    Indonesian soy sauce (sweet soy sauce or kejap manis) and a peanut coconut topping (seroendeng) would go really well with the peanut noodles. And to spice it up you could add a touch of sambal!

    Hi Miranda! Loved this video (how did I know not powdered PB was a thing?!)... my hubby and I have actually been wanting to get into dehydrating (and bonus for us that you don't eat meat or dairy, because we don't either... so we would LOVE your tips to help us make our own stuff and pick a dehydrator in the future). Also I loved the concept of foods that work together to make menu planning and packing work. Keep on making fun videos and Best Wishes!

    it actually makes sense to use the pasta water with the instant coffee as the starch will give it a bit of creamy mouthfeel and your saliva will interact with it to make the coffee taste sweeter.
