We have a guy in our plant who just started process. He is around 50 years old and has worked in restaurants his whole life. Our plants process techs do all 3 jobs (4 really), Resin, Mold Setting, Process, programming and adjusting robot programs. If he can do it, you can too!
Well, I wouldn't necessarily give up on it. Anyone can do it if you show interest in it. If you can find a plastics factory near you and show that you are a competent operator or have some knowledge of using tools and some mechanical knowledge you will do fine. So much of it is on the job training and learning from those around you. Just be humble and learn.

I started as operator...then took classes in die setting...then I was trained by our process tech it took 2 years of in house training but I'm now a full 2shot process tech..

Process technology associate degree
I started as an operator. Went to resin, set up, then process. Some plants do all three.
