While your demonstration is excellent ,i feel the quantities of both citric acid and soda is bit on the higher side for 1.25 cups of besan. I have been watching 100 s of videos of khaman for the past few years and this is what I feel based on my experience. They will surely come out spongy with so much soda, not sure if the taste of soda is overbearing in your dhoklas. I can also see some tinge of redness on the top side which indicates unnutrilised soda . But your efforts is commendable in explaining the recipe methodically .
