    Just did these on the weekend following yours and atbbq recipe. I smoked for about 3 hours and then braised for about 7. They literally fell apart and were completely amazing!!

      Awesome Alex, they are so tasty when you can get them right. It took me a long time to figure them out

    Have been thinking of giving Pork cheeks a go.
    Nice camera/ production work as well as BBQ skills. Great to see someone flying the flag for BBQ from the island of Ireland! Keep up the great work!

      Thanks Pete! I haven't tried pork cheeks but since the beef cheeks turned out ok.. I'll maybe have to give them a try. Glad you're enjoying the videos.. having a blast making them each week.
      We don't always get the weather for it over here but we're a hardy bunch!

      @@Barbechoo Ha! Very true. I tried pork cheek for the first time at The Big Grill Fest in Dublin back in August. They were fantastic. Your beef ones looked great too!

      Thanks James, currently about 3.5 degrees c warmer than the last time we spoke, I'd call that a success! :-)

    You’re definitely overthinking them James . 3 hours smoke at 250 f , braise for minimum 3 hours . Forget temps ,it’s all bout probe .

      I think because the first time I made them they were a disaster... they've always intimidated me but since making this, I've become used to them and I'm happy to cook them
