      So if I got this right - it seems like the flame expedites the oleo-saccharum process. If I let the oleo-saccharum sit and extract overnight then is the flame ...optional? or still preferred?

    Long time viewer first time commenter. Sports bar manager here that doesn’t know much about what goes on behind the bar other than cost thank you so much for this content I’ve watched all your videos and I’m learning and just please never stop doing this it makes a difference

    It’s just the wife and me this Christmas evening, so I made a 1/3rd batch of this for us (we each got about 1.5 - 2 cups out of that) and it was a hit! Warmed the cockles of our hearts! And the theatrics of the fire impressed us both! Funny thing is that on paper, rum + citrus + sugar + tea really sounds like an ideal pirate’s-tiki-drink. We want to make this again and serve it over ice in the summer!

    this is a yearly christmas tradition for me, except i usually batch it and serve it cold. after the flambé step, i mix in the tea (which i chill ahead of time), then pop the batch into the fridge. i usually do this a day ahead. when i want to serve, i squeeze and add the lemon juice (fresh squeezed is significantly better than mixing the juice in and leaving overnight), keep it chilled, and pour to order over ice with some grated nutmeg.
    another tip: if you have a vacuum sealer, make your oleo saccharum by sealing your lemon peels and sugar in a vacuum bag and leave them to sit overnight. you get the most possible extraction of oils and best possible dissolving of the sugar.
    sure, the punch takes two days this way, but i think it’s worth it.

    As the child of Scottish parents who immigrated to Canada, many, many years ago. I am somewhat an expert in making tea. It was my job to make the evening tea, as part of the deal to be able to stay up later than my brother. Anyway! Using a regular sized tea pot (which I am guessing will hold 4 cups of water), drop ONE tea bag into boiling water. Not just hot. It must be boiling. A nice orange pekoe tea is best. Red Rose if you can find it. Let it steep 10 to 15 minutes and BANG! The perfect cup of tea.

    This sounds amazing! Going to try this for my family's Christmas gathering, because it wouldnt be one of my family's holidays gatherings without a trip to the ER. It's sort of a tradition.
    This has quickly become one of my favorite channels. I listen and explore it so often my wife has taken to asking if I'm "hanging out with [my] new bff Anders". Yep, sure am, he calls me friend at the beginning of every show! She's also benefitting finally from me making a cocktail besides a bourbon old fashion.     Just discovered the plantation pineapple rum a few weeks ago. I absolutely love this stuff. Getting ready to buy my third bottle. It tastes like rum infused with the pineapple that I had in Fiji. The freshest pineapple I've ever had in my life.

    I like mint liqueur with warm cocoa. Maybe a bit cream on top. However, I would enjoy cognac as it is and coffee on the side.

    New to this channel and have to say off the bat, thanks so much. My cocktail game is improving by leaps and bounds. Been making the Charles Dickens punch for years but have sometimes had issues lighting it on fire. I will try the warming trick next year so hopefully I can go back to a lower proof rum (Santa Teresa). My lone recommendation is to up the quality of the tea you are using. I have used some black teas flavored with red fruit (Mariage Freres’ Marco Polo and Harney and Sons’ Paris). Game changer.

    We made this for our family Christmas movie night and it was awesome! The booze we chose didn't ignite for some reason, so I put the pot over a low flame to melt the sugar and it still worked out great. The flavors pleased the guys and the gals, so this punch is a winner!

    This looks like a good base for a punch that you could then clarify with milk and drink cold. Maybe make the tea stronger and replace 1 cup of tea with milk, or up the booze content to get similar dilution. I love milk punch.

    Happy holidays!!! I had to make my own pineapple rum as nothing available locally. Did the same thing but used Wray and Nephew and let it rest for 3 weeks. So good
