However, later depictions would add various versions of red Cross designs representing Castile, and/or a religious order, symbolizing the spread of Catholicism, initiated by Columbus's 1st voyage.

Seems very plausible to me that fishermen could have found the new world well before Columbus, and if they were anything like fishermen are now they almost certainly wouldn't go around telling anyone who they didn't think NEEDED to know
