Biscoff is something I'm not used to, I tried them abroad but they are hard to find here in Italy. It sounds new for me making a cake with cookie taste...looks amazing and unique! I love the decoration frosting pattern on top, looks like a basket...beautiful!
Hi Valentina, I'm surprised, I have the impression Biscoff comes from European country, and it should be common in Italy. Biscoff cookies is imported but it's within reach here where I'm from. I love the taste of Biscoff, it's in between caramel and peanut butter. I'm sure you can get it online, maybe you can give it a taste 🥰💕

We have many famous sweets brand here and those cookies aren't so appreciated. In the very last years we can find them in some stores, but they are still pretty unusual!

This cake is perfect! I baked it yesterday and tried today, it's amazing! I always try it the next day and save some batter to try in a waffle maker so I tested both ways and it's amazing as well in a waffle machine! The frosting is to die for! So good 😍 thanks for sharing!

Really curious as to how close the taste is to the reg as well. Beautiful basket weave decorating. I've attempted to make IMBC once. It did not go over well at all 😟. I decided to go with my trusty SMBC, lol. Just to add a little texture I would sprinkle some Biscoff crumbs on the first 2 layers. You know I'll be saving this to my playlist. Thanks... 😉
Hi Tammie, to be honest I've never tried the store bought Biscoff spread as I've not seen it on the shelf so far. I guess homemade will be only option for me. You do have a point about IMBC vs SMBC. SMBC is more forgiving, very easy to make and the method is amazing. IMBC is a little messy for me on the pouring of sugar mix and takes slightly longer than SMBC. Crumbs can be nice too 💕👍🏼

Hi Jenny. I tried this cake today and it was awesome. The coffee give the extra flavour to the cream and if you are going to add Biscoff it’ll be too overpowering as you are topping the cake with the Biscoff spread as well. You can omit the coffee and just have it as a regular IMBC ❤️
Hi dear. I've actually adjusted the sweetness to less sweet, but if you're still worry it may be sweet, you may cut down another 10%. that means 90g brown sugar, 40g white fine sugar (for the cake), 120g sugar (buttercream, don't go any lower than this). Hope this helps
Hi Fiona, Tried this today. Turned out great. But just felt that the home made Biscoff sauce was too sweet. So when we have it together with the cake it’s very sweet. Any possibilities to reduce sugar?
Yes you can reduce the sugar of the cake. You can totally omit the white sugar or remove half the brown sugar. You can also omit the sugar from the homemade Biscoff spread. The only thing is try not to reduce that sugar of the buttercream, it's quite minimal. I guess that's all you can adjust 😊

Tried to make ITMB once though wasn't successful ☹ but when I've viewed others recipes for SMBC everyone's ratios are very different. It's quite puzzling just how much so, lol. You told me on another recipe (the blueberry cake you recently posted) that I could use the amounts here minus the cream of tartar to make a SMBC frosting. Do you have a video for it so I can follow along? That would be so helpful. Thanks!
