  • The summer holidays are here and it’s the perfect time to get stuck into some fun foodie projects and get creative in the kitchen.
    With that in mind, this week Mr Baker is showing you how you can create a tasty puff pastry tart that the whole family can enjoy. In his version, Mr Baker is using gluten-free and plant-based ingredients, but it will work just as well with regular puff pastry and feta, if you would prefer.

    Tomato, Olive & ‘Feta’ Puff Pastry Tart Ingredients:
    - one packet gluten-free ready rolled puff pastry
    - 300g baby plum tomatoes
    - 1-2tsps extra virgin olive oil
    - around 75g pitted olives (green or black)
    - fresh basil
    - 1tbsp plant-based butter (for glazing)
    - salt and pepper to season
    - one block plant-based ‘feta cheese’
    - rocket leaves (to serve)
