    Meatballs have a lot more breadcrumbs in them than you might think, but also Japanese breadcrumbs are a lot less dense than American "Italian style" breadcrumbs, so when you're measuring by weight, it looks like a lot more. (Actually, because of that, it's better to measure by weight anyway, so you'll actually get the right amount.) Also, a beef/pork blend is more Italian; we tend to use just beef in the US because it's cheaper here. So it's actually an improvement!
    The recipe overall sounds pretty good. And, as an accomplished home cook (and occasional professional), the only thing I have to say about your cutting technique other than that you need practice to get faster and less awkward is that you should fold the fingers of your off hand so that you're pushing your knuckles towards the knife instead of your fingertips. When you're chopping, the blade shouldn't go above the upper knuckle of your folded fingers, so you're less likely to cut yourself than if you push your relatively-thin fingertips towards the knife.
    I'm a little afraid you actually put all of that tomato paste in, though. The reason it comes in those little packets is that it's way more convenient than the cans it tends to come in in the US (or even the tubes in the UK), because you rarely want more than a tablespoon or two of tomato paste at a time. Why? Well, another name for it is "tomato concentrate," so maybe that helps see how it could be easy to overdo it.

    • @tempesttube
      @tempesttube ปีที่แล้ว

      Yeah, I was extremely surprised that about that. He didn't even make that much sauce. However, the U.S. version says to use an entire 6 oz. can, but it also says to use two 28 oz. cans of tomatoes (still a surprising amount). I could be wrong, but those canned tomatoes looked like less than half that.

    Maybe more seasoning. You could put more parsley into the sauce and let it cook. You can be liberal with the pepper since pepper is quite volatile.
    Don't be so concerned with ingredient amounts. You don't need exactly 140g of onions. Just one onion of that size shown in the video.
    Also tip for cutting garlic:
    Cut it in thin slices, pile them up and then chop them as long until you think they're fine enough. By thin slices I would go for 2-3 mm depending on your knifes sharpness.

    good tip for breadcrumps: Just buy normal bread, just a bit more then u usually do (or some Brötchen if you know what i mean) and the ones that are left behind get put in a dark and dry space. Let them dry and tehn just make your own breadcrumps. Works with every bread. How i know that, certified cooking lessons by my german grandma.
    Tip 2: Use a ice cream scope for forming those meatballs, perfect size and really round.

  • @jeremyzwiers4335
    @jeremyzwiers4335 ปีที่แล้ว

    props to you for learning to cook man. Italians are frightened about the meatballs with spaghetti right now, but honestly that looks pretty good. One thing worth noting though is that the cheese grader size you were using is more for cheeses like mozarella or cheddar. For Parmeggian you really want a smaller grader size. It lets the cheese melt much easier, and for a number of italian spaghetti dishes like Carbonara and Cacio e Pepe you need the strands to be very small for the dish to be made correctly (emulsion). Naturally, totally up to you.

    JOEY!! My grandma's tips!!: Opinion soup mix added to your meatball and hamburger recipes!(No you literally do it wrong if you don't) SO SO GOOD!
    Dumplings should only ever be made with butter or margarine, not oil, and should literally be four ingredients with flour and salt and baking soda.
    My mom's tips: Soup is SO EASY. So are sauces. Start with red sauce. then white and etc to cover your bases on so so many dishes.
    My tip: Recipes are not military instructions like baking is LOL. ALWAYS reserve a little pasta water to add to your pasta to have the sauce stick. Stir-fry dishes, soups, and pastas, all are great to start with. Artisan bread is literally only flour, water, salt, and baking soda.
    Measure by taste, never over think it. Just don't dump obvious amounts of garlic or something lol.
    Cut the onions straight out of the fridge, still very cold, so you don't cry.
    Never forget to wash your hands after handling onions or spicy things.
    Good luck! Love you guys!
    Cheers from a friend in Canada!

    Joey did a really good job. I was actually pretty impressed, at least up until he dumped the pasta lol. Nice touch with the twisting of the pasta btw. And yes as a trained chef I am required to leave comments but I'll just give some tips to make it easier next time.
    Small tips :
    Buy a zester. Makes finer shredded parmesan that melts better and more evenly.
    When dicing garlic smash it with the flat of the blade first. It won't roll around and breaking it will add lengthwise cuts making it easier to dice.
    Don't know if you salted the pasta water but make sure you do (like 3-4 tablespoons. Yeah it's a lot) and when draining save about a quarter cup of the salty pasta water and pour it into your sauce. The starchy water will make a more cohesive sauce and the salty water flavors your pasta.

    There should be a MASTER CHEF TRASH TASTE Edition. Maybe each video will have a different theme, challenger, etc. Maybe even against other TH-camrs, including Aki, and other friends who have been in the videos. Would be cool, fun, and interesting. Maybe even have a group competition with each other, and the guests, with some spins, consequences, and such.

      @@HouseMDaddict That was only once, and only between those three. I kinda want it to be with their friends and other guests too.

    I too have very bad knife skills. That's why I bought a mini chopper gadget for mincing haha.

    Tbf to Joey the only real issue I saw other than his dicing skills, which only improves via practice becuase with practice comes confidence and with confidence comes speed, was crowding the pan with all those massive spicy meat-a-balls-a, crowding is how you get undercooked things! Also those little packets of tomato puree/paste are fcking ASANINE, they deserve a spot on Aki's Why Japan series lmao

    To be fair, "beef-pork mixture" is probably better for spaghetti, because most meatball or meatloaf recipes call for a mix of pork and beef.

    As somebody who cooks all the time, honestly not bad. The knife skills made me a bit anxious, but that comes with time. Very entertaining, I like the format. Mama mia, Mr. Dogg.

    You're using the wrong parsley, the curly stuff is mostly just a garnish.
    You want Italian flat leaf parsley which, while ubiquitous in the States is a little harder to find in Japanese supers unless you know they have a decent herb section as イタリアンパセリ.
    Mitsuba also makes a decent substitute.

    Joey, a Japanese Australian, cooks an Italian recipe made by an American. This is amazing and pleases my Italian American soul.
