I’ve been sharpening basically all my life. And the last few years professionally. And I still love watching people sharpen and see their take on it. There’s always something to take away. Even if I don’t end up using it. But its there in the catalog. I focus mostly on restaurants. And for the most part I use a belt grinder for a convex edge. And for more high end or specific use knives(sushi) I’ll use a wicked edge. And hand sharpen wood carving knives by hand on stones.
Very nice video! I don’t use any machines or grinders either for any sharpening. Chain saws either, I’ve always done it by hand. Never done any stropping though so thanks for the knowledge, I’ll have to get some leather 👍
Not sure if it makes much of a difference but on the final stone I have always reduced my pressure as a get closer to the end. Still keeping with my angle and stroke but just reducing pressure as I go. It does make a huge difference for the people that use the belt sanders (that's what we used in the wild game butchershop cause we didn't always have time to sit down and sharpen a dozen knives everyday)
Great Info _!_ Your sharpening is so much more aggressive than I would have thought, I am way to gentle. LoL I've got a cheapo 440A SS knife I have been practicing on this past month. It sharpens up pretty nicely ... but dulls just as fast. Great for practice. I'll end up watching this video a few times for sure. I plan to buy a knife from you in the future, once I am confident enough with sharpening. Good to know about the Arkansas sharpening stones, I'll need to pick some of those up too. 👍Thanks.

Fantastic video mate! The first thing I realized I’m doing wrong is hold the knife blade angle way to high-at least twice as high as you were. Question: when they say it’s a 22 degree bevel, is that 11 degrees per side or 22 degrees per side? Thank you

I always wondered what barbers used in the old western movies, when they sharpened the straight blade, so it's a long strip of a leather.

Thanks, yeah you don't have to be as aggressive, it will just take longer in the beginning stages of the sharpening process.
